stuffed Hatch Peppers

I'm a big fan of peppers, any type but I prefer some heat in mine, Hatch are about as hot as a green pepper.
I cooked up some Hatch last week to go on eggs and while the flavor was good there was no heat at all.

This years Hot brings the heat a little more than usual. Overheard a conversation regarding this while waiting on mine to be roasted. The roasted had a nice heat for me but I bought a few pre stuffed w/ cheese and threw them on the grill…they were HOT. I was impressed and it usually takes a good kick to do that.

I must admit, I stand corrected..
Bought a pound of roasted "hot" hatch peppers at HEB this past weekend and those suckers are FLAMING hot!
In the past I've only tasted "normal" ones and they are not hot IMHO, but the hot ones burn burn burn...

Picked up some entry stock for the TD at Fiesta today and they had Hatch Peppers stuffed with grilled shrimp in the Seafood Case - - - - I almost got a crick in my neck trying not to look and buy.
