Smoked Italian Serrano Jalaps

Changed it up and decided to try some bacon-wrapped Jalaps stuffed with Italian sausage, cheddar cheese, and finely diced serranos.

Sausage - check

Wrapped in Bacon with some Stubb's spicy bbq sauce and a little rub brushed atop - check

On the grill for a smoke with hickory and apple wood - check

That other thing is my first attempt at a smoked pork butt. We'll see how it turns out in another thread, perhaps.

Well, went over to the Pastor's after church and -while the Pork butt turned out fine- it was the Italian Serrano Jalaps that won the day.
