So I have 2 Briskets under my belt that turned out tolerable, amongst a bunch of other small smokeables, and today I'm tryin' out a Pork Butt smoke attempt Texas Style. We'll see how it goes.
Rub a dub dub (pepper, salt, garlic powder, paprika, cumin)
About 1/2 way through (I think)

Looks good, water pan always the key for PB to me. Sometimes I throw the onion peels, carrot tops, and some apple juice in the water pan as well. I'm looking forward to you final pics.

Turned out decent, I suppose, but I'm a poor judge of pulled pork, it not being my favorite cut and all.
I will say, though, the modified Shack Attack sauce I made was purdy good!

The pork butt is so versatile. You certainly aren't limited to just pulling it, and the flavor itself is fantastic! It is nearly a perfect 80/20 lean/fat ratio which lends to that fact. If you research all its uses, I know you'll change your mind about it!

I'm not a fan of pulled pork, I prefer to pull off large chunks and slice them like mini-steaks..

I'm quite certain I'll never change my mind about it not being my favorite, as Brisket will forever hold that spot; however, I may begin to appreciate the pork butt more with time and experience. The finishing sauce I made really adorned the sammich, IMHO.

All in all, my Italian Sausage Serrano Stuffed Bacon Wrapped Jalapenos were the real star of that cook.

Beautiful for Sure! You know you can make that Italian sausage from pork butt!!
I felt the same way, honestly, about brisket. I used it primarily to grind up for burgers. That and corned beef. When I finally perfected my brisket technique, my view of it changed. I still can't label it as my favorite though. That award is split and goes to the round and sirloin. As for pork, I'm a fan of it all!
