Well, I'm making my second attempt at smoked chile chili today. Poblanos & Serranos, Diced tomatoes, seasonings, and meat.
Sorry, but the entity of "sports" does not have a monopoly on the word preseason. 5lb mix of ground beef and stew meat. Chili powder, cumin, salt, pepper, paprika
And, while we're at it, let's get some bacon fat drippin' all over.
Put it all on the grill. Got some Poblanos and Serranos.
A little bit in, let's add some diced tomatoes.
I'll post some pics of the final a little later.

Ready to take 'em off and prep for slow cooker.
Puree the peppers in a food processor, add some tomato sauce for moisture.
Add everything into slow cooker, and add some moisture (I added Beer, but beef stock, chicken, or water would be fine).
Add more paprika, cumin, chili powder, and salt. Mix well, and we'll leave it in the crock pot to meld together. Will check the moisture in a few hours.

If it had beans, I could no longer -in good conscience- call it chili. I'd have to resort to bean stew. :)
I've made a lots of pots of chili in my day, but this was by far my favorite. It got a lot of humbling compliments too.

A kindred spirit. I love beans, and I love chili, but in my family there is no mixing of the two. End result from 2 great dishes is one mediocre one when mixed. That one of yours is certainly done right.

It includes charro beans (which I just understand to be good ole pintos), but has beer (borracho means "drunk," I believe, though the alcohol is obviously cooked out), bacon, sausage, and other spices thrown in. I made a batch once and included ground beef along with the sausage.

Now you've got my total attention - - - - think I'll plan on trying some the first little cool spell we get - - - think I'll do a hotwater cawnbread instead of regular.
