The weather let up a bit. Now it's mainly strong winds and occasional showers while we wait for the river to crest. With the wife and kids safe at her parents, I couldn't resist the temptation to fire up the camp chef. We've got a north wind now, so the back porch is mostly protected from the wind. If I'm gonna be here for the duration, might as well start some longer duration cooking!

Coming along nicely after an hour and a half. I couldn't find my spray bottles so instead I basted with a parkay/Apple juice mixture. More to come!

We stopped using spray bottles 'cause they're tough to clean out. Now we just use silicone brushes to baste. The brush heads go right in the dishwasher.

Last baste. Almost time to foil.

Getting interesting. Power has gone out three times in the last thirty minutes. First time in all of this. Learning a. Lot about the camp chef. Still very impressed.

Gambling for now. Saving the gas for the generator for later. We lost power for about an hour so I moved the ribs to the gas grill while I got the lines run for the generator.

Power is back on so the generator is off for now. Ribs got a little more steamed than I was hoping for, but they look pretty tender! Back on the pellet grill to firm up the exterior, hopefully!
