coffee in the beef rub?
hi all. i'm very traditional with my beef rub - salt and pepper only - but i can't help but wonder if a bit of finely ground coffee would really be a nice addition. anyone done this with any success? similarly, anyone every try using a espresso as the juice when you wrap? thanks.

Re: coffee in the beef rub?
Hello there,
I have used coffee as a rub ONCE..
I myself didn't care for it, but that may be just my preference ?
As for expreso,
I haven't tried it, but I would guess it might be WAYYY overpowering ??
Good luck if you try it, who knows it might be really good ?

I've seen guys on TV adding coffee to brisket injections along with other "odd" flavor profiles and while I would very much like to get a taste of brisket with coffee and other flavors added, I'm not willing to risk a nice choice packer coming out tasting weird..so it's salt and pepper for me unless/until I can get a sample of enhanced beef that I like.

Curious, too! I'd try to find a BBQ place that served it.

Re: coffee in the beef rub?
Just made a batch of brisket injection for this weekend. I use a cup of pecan flavored black coffee with some Butchers Prime injection mix.
I'm happy with the results so far. I used coffee in the rub way back when but was not a big fan of it.

How bout some more beans Mr.Taggert? I'd say you've had enough!

Re: coffee in the beef rub?
BlueDawg has a brisket injection recipe posted around here that uses some brewed coffee. I've tried it out and it is fantastic! Using grounds in the rub is not uncommon, though nothing I've tried before. Thinking on it, used sparingly, coffee can elevate the flavor of beef pretty well. Slightly acidic and bitter just seems to work with beef; or beef is resilient enough to withstand such a punch. Which one? Heck, I'm no expert. Lol!

Would you use fresh coffee or spent grounds? Not sure why but I think I remember somebody using spent grounds at one time.

My late D.I.L. used brewed coffee in her Pinto Beans and, altho my Son (her hubby) was a fan, I was not.
