Deer Camp Cabbage

Years ago, I mean years ago, I visited a deer camp late. They were running a smoker and had already finished eating but had something in foil on the table. It was smoked cabbage.

I didn't even know I liked cabbage.

It was so good, I stole the technique and throw it on occasionally when smoking meats.

I have a prime rib going now and will be adding cabbage shortly.

Very simple, but very good.

You are seeing a head of cabbage with stalk end cut off and a pocket carved.

Then onion, butter, a little, very little, seasoning, a few slices of Serrano (optional).

Reassemble and lay some cheap bacon on it for good luck.

Close foil loosely. After a couple of hours of low temp, I open the foil some.

Good stuff.

That sounds real nice, I do cabbage the same but In a honky hangi. It steams itself. I like mine served with a dash of mint sauce, they go well together.

The temperature will need to reach high enough to cook the bacon and soften the cabbage.
I am afraid to even guess at time/temp. I will tell you more than I know. How about 3 hours at 243? ;) or 2 hours at 271? I really never have measured either on the cabbage. When the bacon is safe and the cabbage is soft, it is ready. Or when the main meat is done, whichever comes first.

Thanks for sharing, looks mighty good! Some of the best eating around happens at deer camp.
How bout some more beans Mr.Taggert? I'd say you've had enough!

LOL - I want one on the name alone :)

We do cabbage like this in the smoker quite a bit. Turns out great and it's very simple. Thanks for posting, you added some stuff I usually don't so I want to try your method. Looks good.

A honky hangi is a 44 gallon drum, it has a perforated raised base at 6 inches up from the bottom, a 5mm hole drilled 4 inches up from the bottom, water is filled up to the hole, meat is stacked on the sheet and on top is chickens then vegetables, the lid is sealed and gas heated up underneath and it cooks for 3 hrs, Maori cook hang is underground but my way is a lazy way to do it, the taste is unbelievable. Basically it's steamed.
