Well, the California brisket is done. It's rested, and is cooling so I can vacuum seal it. I may have to separate the point and the flat to fit it properly. Might not be a bad idea so they don't have to heat it all at once.
My neighbor's brisket is resting now. He's coming by in about an hour to grab it. I'll grab a picture of it when I unwrap it.
Thanks for hanging out with me all day! (Not pictured, having to clean my throttle body while cooking and working because my check engine light came on

Looks really nice. I vac sealed a whole rack one time. Worked out well…just can’t quite remember the exact defrost method.
