Say Sir Egg,
I took advantage of the standing prime rib sale at Krogers a few days ago and am going to throw a couple of 6 lbers on tomorrow. Do you have a favored way of preparing them for the egg other than aging?

Surf 'n' Turf: Smoked beef tenderloin w/ creamy horseradish sauce, lobster roll's and the bestest, freshest, cleanest, sweetest shrimp in the world. All with garlic mashed potatoes, salad and fruit. Dessert is Coconut Cream Pie and Rum Cake.

There's a vendor that hops local farmer's markets around the suburbs of Houston on Saturday's who's family runs a shrimping biz out of Palacios. It ain't cheap ($14/lb), but man......it is the finest shrimp you will ever put in your mouth. If you ever come across a shrimp vendor at the farmers market, take a look at their shrimp, ask where they get their shrimp from. If they're from Palacios and the shrimp is fresh, buy a bag! You won't regret it. That stuff is so good that all we do is boil it so we can savor that sweetness.

We are a day ahead of you guys, we are having
Roast leg of lamb, rolled Turkey breast roast with cranberry stuffing, pickled pork with apple sauce, new potatoes dug that morning from our garden, peas from our garden, carrots from our garden, roast potatoes, yip we have tatters 2 ways.roadt pumpkin kumara carrots and parsnips. Daughter is bringing trifle, and daughter in law doing pavlova. I'm gunna be bursting. Not eating the day before. My gravy and my mint sauce as well. I know it's a lot but it's only once a year. Pickled pork is my kids highlight. There would be a riot here if it's not on the plate. I think it's pickled in a brine for a while, I will " boil" it for 3 hours. It melts in your mouth. It's skin on also.

I go real simple with prime rib. Just Salt then a heavy sear, followed by roasting until 120-125 internal temp, and rest for 10-15 minutes. We like it medium rare.

Ham, candied yams, dressing, and an undecided dessert. Our Christmas eve meal is menudo and some jalapeño cheddar corn bread.

No cooking for me tomorrow. Kids are coming over in the morning for brunch and to open gifts then are heading to their others in the afternoon. :(

Having some of my family coming tonight for Christmas Eve. 2 of my brothers,my mom and a aunt and my daughter and hubby. 12 folks in total.
Wife's made up some hashbrown bake, numerous salads and only God knows what else everyone else is bringing.

I just put on the meat in the pellet for tonight.

I'm guessing it'll be leftovers for us tomorrow. :laughing7:

The pig is defrosted, there's nothing the matter.

The Nesco is perking away as I type
The apples and onions are perfectly ripe.

They were quite delicious

Thanks Bobcat. They looked like coal but were moist and tender on the inside. It turned into the dish everybody kept eating even though they were full and claimed they couldn’t eat anymore :)
