Pork nuggets or candied pork

I use to make something called salmon nuggets which were salmon cut into chunks left in a candied dry rub then smoked. I had some left over pork loin and tried making something like it. Turned out pretty darn good I must say.

Between my daughter who hates pork and clean her plate and my wife that says all the time the pork wasn’t cooked thru enough ate 1/2 of the container of those pork pieces. It was money

No actually I didn’t. I was surprised by it to tell you the truth. I left to go do something and knew they were at around 135 so I pulled them off and wrapped them. Turned out really well. I feel like I’m started to get the hand of this smoker.
