Pulled pork blues

Postby bsooner75 » Sun Feb 11, 2018 3:47 pm

I wrap butts in foil. When the bark achieves the color I want and starts to split open I wrap. Sorry I can’t help with temps. I don’t go temps on butts.

I did put it in a pan and covered it with foil. S sprayed it real good before covering. Now I will wait a couple of hours before temp probing again. Itwas at 150 when I wrapped it.

When the bone slides out it’s done.

It was good and I think the rub was spot on but it didn't get as tender as I wanted. I think the rain really took a toll on the temp. I also wish I would have ran at a higher temp. It stayed around 225. I wanted 275 but the rain got me.
