Brisket bbqing on Thursday question

So I have gone back to school to finish up my BS and we have an actual party we are having for the last day. That's at 6 pm this coming Thursday. I teach that day from 9-2.
I could start earlier in the morning and have it done before I go to teach but timing is confusing.

OR

I could do it Wednesday but what's the process of cooling it down before sealing it and placing in a cooler/refrig. - I get to wrap it and seal then place in the refrig.

I read here to vacuum seal it and drop it on warm water and slowly warm up. For how long ? Simmer or lower? For how long? I have time to warm it up before heading there for the class

Sounds like a hectic schedule. I'd lean to the side of doing it the day before but quite honestly it's going to be difficult fitting a Brisket into that schedule.

There will be some Pros advise you, hang tight.

If you are finishing the brisket in a pan once cooked you can place the packer in a 4 gallon storage bag seal it up and ice bath it in a cooler. Once chilled place back in the pan with its juices cover and refrigerate. Then on Thursday heat the brisket in the oven on around 325°still covered in the pan with its juices to 165° then slice.

I just ate the two small pieces in the corner of that pic. Delicious. Sucklebuster does it again. The temp is 155 and will wrap them shortly. Looking forward to the tasting of the corn beef.

I’ve got a 20 point temp difference between the two briskets. This should be interesting. I tried twice to show pics I guess I’ll wait until they are done now.
