First long cook on the Shirley...

Needed to get atleast one long cook on the Shirley before an upcoming completion, so I grabbed a prime Brisket and boneless butt from Costco, procured a stack of post oak and set the alarm for 430am.

Ran a little hot for the first hour or so (around 300-310) as I expected the meat to bring the temp down. Well that didn't happen so I just let her run. Most of the rest of the cook was done around 240ish. Most of the cook Was done on the top (hotter rack). Used a sprits on both and wrapped at about 5 hours when I had a nice bark.

Came out great and I loved the process of the stick burner. Definitely think the first hour did effect the bark. Top later was a little dry and a hair tough (noone else noticed but I definitely think it effected it).

Got a good feel for the pit and am excited to haul this girl to my next cookoff

Looking good Russ, I too have a Shirley and it's never produced a decent meal yet.

I might add that's my wife's name, Shirley,lol. She doesn't cook. I do it all. Lol, she says the kitchens for walking through to the lounge,lol.

Thanks brother, I'm really having a blast with it. Coming from the wsm, I was a little worried about the drastic change but it's really a fun cooker to run. I haven't regretted buying it for a moment yet.

Over the 10ish hour cook, I think I went through about 25ish splits in 50*weather.

Looks like a winner, what part of Houston are you in, I am south of Houston. I will have my Shirley at a comp April 27-28 in Montgomery at an IBCA event, then again in Pasadena June 22-23 at another IBCA event.

Hey TexasSmokers, I'm in the North East in humble. Are you going to be at the southern star cook-off on the 27th? I considered it Conroe, but I'm thinking it can go either way. :). If so, that's where I'm going to be.

Lord Have Mercy. When I retire and don't have to punch the clock I am going to get a Big Boy cooker like that. Food looks outstanding!

I will be at the Lone Star Pony Express BBQ Cook-off in Montgomery, I get home from overseas next Thursday afternoon, will drive down there Friday and do a quick set-up, then pull my chair out, fix a drink and relax....
