How to mellow a rub.

So I did a test cook this weekend on chicken and am using a new rub, as I have come to hate all of my previous. I like the flavor but I think it's a bit too spicy for what I'm looking for. I don't have time to start looking for others at the moment as I'm coming this weekend.

The question:. What would be the best way to mellow the sounds of a rub? I'm thinking cutting it with the basics (s/p garlic, brown sugar).

Thoughts?

I use turbinado or white sugar. If you are doing this for competition the best advice I can give you is remember you are not the one that has to like it. Now days mild rubs may not stand out in the world of sweet heat.

Use less......you may need to add salt to the chicken separately.

Alternately add mustard powder but it will change the bark while changing flavor very little if any after cooking.

Thanks Kam. I enjoy spicy but it really almost had me sweating and I find hid allot of the flavor. I am thinking of going with a completely different rub.

I think I need to get to a comp to do some judging. I am just not sure how hot they are going out there.

I'm not sure if they have enough judges or not, but KAM is head-judging a competition in Port Neches this weekend.
