Prepping for the big day!

5 briskets, 40 lbs of chicken breast, 12 lbs of pintos, 12 lbs of rice, 4 gallons of cheese dip, 10 lbs of pico de gallo, 500 tortillas.

This is my list for the wedding I will be cooking for this saturday. I've already begun the beans and will start the brisket rubdown today. That gets put on the smokers tomorrow. I will start marinating the chicken either today or early tomorrow morning. They want brisket tacos, cilantro lime chicken tacos, refried beans and spanish rice. Chips and queso as well. I am just cooking and setup, no service required (thank goodness because it doesn't pay that well lol) Given that I have to roll out 3/4 of those tortillas myself, I still don't think i'm charging enough :lol: It's for a friend though and they wanted an easy menu, so I was happy to keep it in their budget. There will be pics here along the way, no doubt! Stay tuned!

WOW, Sir Chef, and to think I was feeling sorry for myself with 2 pork shoulders and 30 chicken thighs for my biggest cook ever. Good Luck and "OF COURSE" Pics when ya can. :tup: :salut:

I am down to only 1 smoker, so the briskets get started tonight. Oklahoma Joe needs to hit a home run! The 2 smallest briskets go on now. 11.5 pounder, and 13 pounder. The 3 remaining are 15, 15.5 and juuust shy of 19lbs.

4 hours in, 225 degrees. Looking pretty good so far. They should be ready to pull about 3am or so. I'll let them rest in the oven while I get a nap in.

The halfway pics I posted up a bit ago are the only ones so far. It is 520am for me now and I'm still up waiting on these 2. Lol! Just added a chimney of lump after I dozed off for a brief nap. Temp dropped to 200 after my last check at 4am. :shock: I'm hoping to get the others on before 9am.

Probe tender at 630am. Got 2 more on now. Gonna have to use my other offset as a direct grill for the chicken. Lol!

18 pounder and 15.5 pounder as of now. They went on about 8am.
Just finished the refried beans, thank the Lord for immersion blenders. Lol! About to start the pico de gallo.
