Mother’s Day Menus
What are y’all doing for our irreplaceable Mothers? I’m going to do Rambo Burgers, Venison/Beef Sausage, and 2 Racks of the HEB .99$ Spareribs I picked up last week. Going to cut those into St. Louis racks, ala KAM. If anyone has suggestions on a good thing to do with the portion of the ribs I cut off I’d appreciate your insight. That part usually turns out like Jerky for me.

Rambo - when the trimmed part gets good color on it wrap in foil with a little liquid. When it’s done freeze it for beans, pull it for sandwiches or tacos.
No idea what I’m cooking yet. Actually I’ve had several ideas and the wife has shot them all down or said she didn’t know yet.

As of now, pork belly burnt ends for appetizers, smoked turkey, mac and cheese and green beans for dinner.

Nothing this year. Debbie and I will be headed home from Kerrville as I have an IBCA board meeting on Saturday.

We'll probably meet Sherry's Sons and Family somewhere to eat and celebrate.

Nothing cooking for this Mother's Day for me. I'm still working...and in the theatre business and we have nutty hours. I'll be working on Sunday midday, so that ends that.
I have a neighbor who is coming home from a hospital stay, so I'm making my lasagna that they like. Just trying to be nice to them.
And in return his wife makes me cracklin cornbread.

Here in lil ol New Zealand I'm cooking for my wife, kids are all coming as they do on a Sunday. We're having ( her choice)
Chicken liver pate with lotsa nice condiments, pickles curry onions salami and crackers.
Main she wants a hot ham with my glaze of bourbon maple syrup apricot sauce and honey grain mustard. Served with salads and potato dauphinois.
Dessert are store bought crepes with ice cream etc.
She's really worth it. She's been a great mum to my kids and our grandkids. I'm blessed.

Getting ready for daylight in the morning. Untrimmed and trimmed, St. Louis & Pre Seasoned. Wrapped in Saran Wrap and in the Fridge until about an hour before daylight. Will hit them with Hog Waller before they go on.

I always allow the wife to pick out anything she wants for these special days. If she wants to go out, or if she wants me to make it. She requested a jalapeño popper stuffed chicken breast and strawberry ice cream. I'll certainly post the pics! Sounds like you've got a plateful as well! Looking forward to finished pics.

Made it home from the hospital in time to get mothers day dinner going. Smoked turkey and pork belly burnt ends as an appetizer. The moms should be here soon!
