Pricey piece of meet....not sure how I feel about it.
I almost feel more satisfied after a brisket or even pork rib smoke.

There's a definite art to beef ribs. Your's looked pretty good. :tup: There's folks here that can help you up your game though. Only thing I can see from the pic I'd do differently is go lower and slower so the smoke ring gets more depth.

I've done them once and thought they tasted like roast beef so I bailed out and haven't been back.

What did you dislike about them? Have you had them at a bbq joint and if so what did you like more about theirs?

They were tasty no doubt.
I kinda felt they were a bit fatty, my drain on the smoker was working overtime. And even once done, still had lots of fat. I had to pull them at 195 because of company and only a 30min rest.
Very tender though. I was fighting wind all day and tried to stay at 250...took around 10 hours to get to 195. Didn't wrap them. I feel kinda blah about them.

Gotcha, beef ribs are fatty. They require a low and slow cook to render that fat down. For a first go I think you did good.

They look real good to me, but they ARE expensive. I tried smoking them on my bullet a few times, but mine were not as large as those.

I'll try it again though.

If that question was for me, I have only had them once, when I smoked them. Even tho they were tender and, if I liked roast beef, they would have been good. But I don't and they weren't. :dont:

They look sooo goood but we never see them here.

I wonder whether you might as well buy a beef roast, bone it to your liking, then cut the boned-out parts into steaks. Might try that one day IF we ever see that either.

If I try them again, I will take the internal temp higher to render more fat. I will also season less to get more meat taste.
Company didn't complain.

Haha, not really Emm. Was hoping to be able to provide some help to the OP with a little follow up question. Did you wrap in foil? That could have contributed to the roast beefiness

This was my first time smoking and eating the ribs, so I didn't really have a base line. Mine were not wrapped. But I think if I got the internal temp a bit warmer, more fat would have rendered.
Now I need to get them on sale
