No, I kept it on till after the cook.
You think that had a negative effect?
I always pull it off on pork.

We never did beef ribs, so I'm not sure. :dont: But we always pull the membrane on pork ribs.

I was told that removing the membrane helps the seasonings penetrate a lot better :dont:

That's a great looking rack of beef ribs. To me they are worth the money, if you can cook brisket you can cook ribs. and you Sir did an awesome job on those. just from looking at the pictures I can tell you I would tear them bad boys up. i like fat on my brisket and even more on Ribs :drunk: :drunk:

They look very good to me!

Up here in the Northeast, It's hard to find beef ribs & what you do find in the stores look pretty pathetic. One day I may try them at a BBQ joint.

I smoked some short ribs a couple weeks ago that turned out fantastic! I'm shooting for a repeat this weekend. I'll take some pics and let you know how it goes.
