Spare kinda Sunday

Wanted to give momma a break (quiet house) so I am taking the oldest 2 to a neighbor's house this afternoon. Put 2 racks of St. Louis spares on to bring with us so we can pull our weight, food wise. Also took the bbnopportunity to get the boy involved in the process!

He was proud.

I'm working on building layers of flavor on the ribs. Light dusting of SPG to start, followed about 10 minutes later by a heavy coating of hot waller.

Thanks ya'll! Ribs are getting there. Color was just right after three hours. Got 'em wrapped with magic blue bottle and Sucklebusters chipotle sauce adding the moisture.

Kinda going back to my roots with this cook. Lately I have bumped my temps with good results. Since I have the time today, I'm keeping it low and slow. The Camp Chef has been chugging along at about 218 all morning.
