Memorial day meal prep
Jest got through propping all the meat for tomorrow. Got two racks of babyback ribs and a butt soaking in vinegar and a chicken soaking in a kosher salt and brown sugar brine. The miller lites are chilling in the fridge and now I got to get to work on the sides. I am making Spanish rice and beans a la charra for the grownups and a nice home made Mac and cheese for the kids. Now don't freak out everyone!!! The meat isn't going to sit in the vinegar Al night. Gonna let them sit for about another 4 hours then season.

I finally broke down and bought a digi temp gouge. The Oklahoma Joe temp gouge shows about 290 and the digi shows 240. Big differences I would say. As soon as the smoker comes up to temp in go the butt and the ribs. Once again mother nature is trying to rain me out but me and miller lite are not going to let that happen. I also have the frijoles a la charra in the crock pot. Can't wait to see what everyone else has going today.

Going with the K.I.S.S. principle today with the ECB and some hot skillet grease to create some Rippers, ABTs and Street Corn. Nothing fancy but some of my favorites on this Special Day of Remembrance

I love this temp gouge. Im in the kitchen taking care of business and Im able to keep an eye on the grill. I love the smell of these beans but I know the smell is going to be horrible later.

a la charra are my very favorite - - - I know a way to remove most of the high octane from Pintos if you're interested
