Pros / cons of a rib rack?

:scratch: I was thinking about building a rib rack today for my pit, i usually cook bone side down but wasn't sure if there were any benefits to using a rack other then to save space. I heard the mop will run off and they don't seem to stay as moist.

I have a couple of commercial rib racks that I've used over the past and it was purely because of quanity. I didn't have any problem turning out moist, seasoned and flavorful bonz. However, after I bought my Pellet Pooper I haven't had the need for the racks cause I can do 3 pretty decent size rack on it, even tho it's a smaller Grill. :idea:

Just a space saver as far as I’m concerned. If the ribs aren’t just the right size they can tend to lay on each other and make it hard to Sauce. Good if your cooking more than one rack on a kettle or something like that.

I will ditto what OUP said the rack seemed to work well.
I do know of a guy (actually a KCBS certified judge and competitor) who when faced with a big rib order dilemma rolled the ribs up fastened them with a toothpick and stood them on end on the grate of a pellet cooker.
I don't recall the number of slabs but it was a lot (like 15) to fit on that grate even rolled up but they turned out good and he said he would do it again.

in my experience the important thing is to make sure the heat and smoke can get to all surfaces of the ribs all else like glazing can be worked out.

Matt, here's some reebz that I did in a Rib Rack back in 2015. Maybe this will help you determine. They were done on my ECB over Kingsford Charcoal.

I have an unused stainless setup for something like 8 ribs I bought for my old Smith and Wesson 38 special from traeger pellet popper. I’m never going to use it.

Thank yall for all the replies, it definitely helps and give me a good insight. I didn't 4 racks of st louis style Saturday. The cooked perfect but I wasn't to happy with the sauce, that's another I'm working on. I'll probably make a rack just to have and us3 in case I need room. I do like the thought of rolling them up and just setting the sauce on top of the roll and let it trickle down a little at a time, might have to try that.
