Off the smoker, rolled em in honey, bbq sauce and butter, then wrapped em and gonna throw em back on for an hr and a half roughly or until they hit 200-205. Then gonna take the foil off n let the sauce tack up. Looks good so far, we'll see what happensImageImageImageImage

Definitely want to see the final.

Did one a PB last fall where we scored it, soaked it in Aaron Franklin sauce overnight, then seared it whole over hot hickory until it developed great color, crust and sear, then finished it off in the smoker for 2-3 hours before cubing it up and serving w sauce to dip in on the sides. Came out gangbusters.

Gentlemen, if you have not tried this yet I strongly recommed you do. This is the true definition of meat candy; sweet, savory, Smokey, the silky rendered fat and meat literally melt in your mouth with every bite. You might chew twice per bite. I cannot stress enough, if your havent done these yet, please please do, you wont regret it one bit, pure greatness!ImageImageImageImage

Pork belly burnt ends are one of those foods that are hard to stop eating once you start. Those look very good.

OK. I'm currently curing my bacon and want to take a 5 # section to make burnt ends. How size cube cuts do I make? 2x2 or smaller?

I'm always set on 1"×1" or even 1.5" × 1.5" cubes but that just how I've done PBBE.
I also cut them in cubes right away so all of the sides can be seasoned and smoked from the get go.

Ur gonna love them, just make sure you dicipline urself enough and put them back on the smoker for the final stages after you sauce them up, it's tempting to want to eat them at this point, but DONT yet :)
I've found the Apple Cider Jelly really adds a unique flavor to the caramelization.ImageImageImageImageImageImageImageImageImage

I can’t wait to try them. I haven’t made bacon in about 3 years so the process has gotten me quite excited already and it has set up nicely for only being 48 hrs into it. I did pull it out this morning to cut them up then threw them back in. Super excited right now.
