How do you guys do it? Is it a regional recipe or done similarly all over? I’ve never done it but it looks great when I see it in pics or videos.

Those come from the point and I love the point sliced so much I don't make them. We've got some competition guys here that should be able to offer you some good advice.

I'm like Rambo and dont want to sacrifice the point of my brisket to make them. I have seen a YouTube video of them being made with pork belly though, they look delicious and plan to try it here in the near future

10-4 Hoop, recentlly I've seen some Members posts that did them with Pork Belly and man they did look larapin

I make burnt ends with pork belly, brisket point I love sliced with the flat.

I do, but this cook has no set timing and requires patience. Every belly has it's own time to done. Easy cook...just lots of time
Ingredients:
I pork belly - 5 to 7 LB, fat cap lightly scored in a cross hatch pattern, about 1 inch spacing
Rub - your choice
Sauce - your choice
Directions:
Heat the smoker to 250.
Rub the belly on all sides while the smoker heats up with your choice of rub / slather
Smoke it to around 175 to 180 IT and pull
Cut the belly into cubes along the cross hatch lines you scored in the fat cap.
Pan the cubes (don't crowd too tightly - need the heat to circulate. Use more than one pan if needed), add more rub and sauce, and put them back into the pit uncovered.
After a couple of hours, start sampling......be aware that this might take another hour or two.
When they're ready, it's Q candy and a real treat.

I hear ya Piney, I still havent had a chance to make em yet, but a plan on doing a batch this weekend and trying them out. Ill post up pics on here, hopefully if I do my part they come out as good as they sound/look [THUMBS UP SIGN]
