Burnt ends

Postby Copasspupil » Sun Jun 10, 2018 4:03 pm

How do you guys do it? Is it a regional recipe or done similarly all over? I’ve never done it but it looks great when I see it in pics or videos.

Those come from the point and I love the point sliced so much I don't make them. We've got some competition guys here that should be able to offer you some good advice.

Good Luck

I'm like Rambo and dont want to sacrifice the point of my brisket to make them. I have seen a YouTube video of them being made with pork belly though, they look delicious and plan to try it here in the near future

Interesting. Did they call it something else? I’m going to do a search.

I do, but this cook has no set timing and requires patience. Every belly has it's own time to done. Easy cook...just lots of time

Ingredients:

I pork belly - 5 to 7 LB, fat cap lightly scored in a cross hatch pattern, about 1 inch spacing

Rub - your choice

Sauce - your choice

Directions:

Heat the smoker to 250.

Rub the belly on all sides while the smoker heats up with your choice of rub / slather

Smoke it to around 175 to 180 IT and pull

Cut the belly into cubes along the cross hatch lines you scored in the fat cap.

Pan the cubes (don't crowd too tightly - need the heat to circulate. Use more than one pan if needed), add more rub and sauce, and put them back into the pit uncovered.

After a couple of hours, start sampling......be aware that this might take another hour or two.

When they're ready, it's Q candy and a real treat. :D

Hoop,

Good video. I haven't tried cubing from the start, but probably will the next time I do PB burnt ends. I'm gun shy on overcooking the PB, so that's why I do the initial smoke whole and build the time in on the back end of the cook.

As long as you get there, it doesn't matter how you get there. :D
