Smoking brisket flats

Hi Everyone,

I just joined and need some advice. I am planning to smoke two flats because no one around me has anything large enough for this occasion. I would like to know if I smoke both flats (around 6 - 8lbs each) how much time I will be looking at before they hit the 160-165 degree mark.

My goal (of course) is to have them ready for the party. Thank you for your help.

Welcome! When you get a chance, swing by the new member's section and introduce yourself!

For time, you're going to want to estimate an hour to an hour and a half per pound at 225 degrees.

Is there a reason you're shooting for an internal temp of 165? They'll be awfully tough at that temperature. You'll want to take them higher (if you don't have a particular reason for 165), 195-210 to get them probe tender if you want to wow your guests.
