Quasi Competition Practice

Need to start kicking up my chicken to get in the swing for our comp in October so I talked the wifey into letting me smoke a chicken on the kamado. Working more in the technique today. Didn'tbribe, but injected with Butcher BBQ's chipotle bird booster, then liberally hit with Sucklebusters Clucker Dust. I will be glazing with the SB original sauce when we are almost done. I love the HEB natural chickens. This one was just under 4lbs.

Glazed and finishing....first spatchcock on the kamado and the skin is a bit darker than I like, but it's been an extremely easy cook. Momma can't eat broccoli, so I chopped some, hot it with salt, pepper and some butter, wrapped it in foil and put it in on with the chicken....we'll see!

Normally use copycat brine and its awesome

I normally brine, but didn't have time today. The bird booster does put out a very moist and flavorful bird. I prefer brining, but for a quick boost, it's great
