Did these a little while back (the 10th actually) but with all the drama I didn't get back here for a while. Past due fer postin', lol.\

I went more traditional this time vs marinading the ribs in sauce the last couple of times. I wanted a bit more meat flavor, and the marinade was overpowering the meat just a hair. Soooo, rubbed them heavy 24 hours before and let them sit in the fridge, then on the Rec Tec at 180 degrees for most of the day. Finished them off on the Weber kettle to give them a little bit of bark.

I'm a little unhappy with the appearance. The rack in the background LOOKS burnt. The Weber really didn't do much beyond blacken the rub and give a paper thin bark for great texture.

If it were just the Weber, I'd probably incinerate them, LOL. The Rec Tec, since it's a pellet grill, makes it so easy to turn out great food though. :D

We've made ribs in the Weber via the Snake method. It worked out really well, just not as pink all through.
