Re: cabrito
My $0.02 is to be sure and don't over cook it or it will be dry - - - to me it's the same "challenge" as you get with fresh Venison so, brining, injecting, constant attention to not over cook and lots of basting are some good things to consider. Tony's Chacheres puts out a Cajun Butter Injection that should work pretty good, altho I've only use it on Chickens and Gobblers. Good Luck and please let us know what you decided and how it turned out, OK ?
One more thing, if I may?? Are you cooking a whole goat or just a 1/4 or so?????

I'm also a big fan of cabrito. I've never tried to smoke it so I would also love any information that y'all can provide.

Re: cabrito
Depending on how you'd like to cook it. I would make an elaborate in-ground braising setup to keep it traditional with a modern twist! You can season it soooo many ways. I tried an awesome Moroccan braised goat dish once that was simply wonderful. Goat is pretty popular in jamaican cuisine, so a good jerk seasoning would be pretty rewarding. The sky is almost the limit for this cook.

Re: cabrito
What about a La Caja China? They run about $300 to $400.

Hey CaptMike, in case you still need some recipes, I ran across this awesome Link while Googling WBBQ's La Caja China technique. If you can't find one in this list then you're in trouble HAHAHAHAHAHA

Restaurant Depot randomly carries these. Believe it or not, they are actually built pretty well for the amount of Benjamin's it will cost you.WBBQ wrote:What about a La Caja China? They run about $300 to $400.
