First brisket ever
Hey folks!
I live in minnesota but spent time in Sugarland and Dallas, TX When I was younger. Got tired of dickies and famous Dave's so I figured I cook my own on my new smoker.
This was a 7lb brisket and I cooked it for 9 hours. Pulled it when IT was 199.4. I feel that I could have cooked it a little longer as it was a little on the tough side, but not leathery by any means. I also feel I trimmed a little too much fat off the cap. Still enjoyable though!

Howdy and Welcome to the Forum
Sounds like you're just a couple of cooks away from the Brisket you've been waiting for.
I, myself, am a newbie as far as Briskets go but that bark and smoke ring looks awfully good to MOI.

Looks pretty good from here, might be a lil undercooked at 199. I usually cook till 205 then I use the probe to see if it slides in like butter in the fattest area. Good job Sir!
How bout some more beans Mr.Taggert? I'd say you've had enough!

Re: First brisket ever
Thanks guys!
I did quite a bit of research on YouTube and reading cookbooks. The hardest part for me was being patient and fire management. Hopefully I can learn a lot from this forum!

Re: First brisket ever
Looks pretty darn good, especially for a first go around. You certainly got a great looking smoke ring on it.
Based on your self critique, maybe a little lower and slower on the cook next time. Spritz it regular and/or inject it too.

Re: First brisket ever
First taking a cut at the first pitch, you hit a triple. You are only about 2-3 hours of cook time from a hook slide home.
You have done well, Grasshopper.
