As the varmint running it. :D

Case and point, the place at the state fair that's supposed to have the best BBQ:

Now they've got a couple of pretty dang big stick burners next to their stand. Got some pics with the Nikon, bit they're too big to attach here. Anyway, here's the spare ribs that came off the bbq there:

Now if you're struggling to see a smoke ring there, that's cuz there's barely one there, LOL. They had a bit of smoke flavor, were sorta tender too, but were far from competition level gentle pull off the bone tender. Coulda been a bit moister too. Not bad, just not good. They were done high and fast. Now the tri-tip on the other hand... I'da been ashamed to serve anything this overcooked:

I tell yah what, it's beginnin' to feel like it. :scratch: :banghead: It's the state fair, so you can't expect world class, but that tri-tip was pretty bad. Ribs were passable at least. :pig:

Somebody spilled ketchup on the ribs......
Overcooked tri-tip in California is grounds for seclusion with vegans....I think.

In their defense trying to cook BBQ for a large audience over a long period (all day long) is darn difficult. I bought a big Old Hickory rotisserie for that it is a better way to go.

Sadly the sauce was better than the ribs, LOL :banghead: ...but not by much

As much as I disdain Vegans (just the self righteous, preachy ones really), I wouldn't do that to the Vegans, LOL :mrgreen:

All kidding around aside, I know it's a challenge. They've been there for YEARS though. If they value their name and rep, they should invest in a rotisserie or even some good warming boxes for after they pull food. One of these days I'm gonna show up with the Rec-Tec in tow and challenge all the BBQ joints there to a throwdown. :lol: :chef:

Closest I get to BBQ at the State Fair of TX is the BBQ Bologna sammich over by the Cotton Bowl …it’s a good un. Mostly I’m trying to scarf down as many corn dogs as I can before my wife shoots me that “Are you trying to have that heart attack today” glare :)
