Patience was the key. I did like most of my cooks and set the Rec-Tec at 180 degrees at the start, then I let it run that low for the first four hours of cooking. Rec-Tec also has an 'extra smoke' mode at low temperatures; you turn that on and it cycles the fan on and off. That generates more smoke and leaves it in the chamber longer. The results show in that smoke ring too.
It was a twelve and a half hour cook, and worth the time it took.
