Practice is paying off
Brisket on my Texas Original has been hard work....fire management has been tough, wrapping in foil vs paper, keeping the temps below 250, timing.....all the gremlins of cooking good que on a stick burner....but, this time, I killed it!!! (Still needs a tweak or two). This cook was fantastic!! Practice is paying off!!

Good job. I've had my stick burner for several years and it's always challenging; temps, wind, wood, all different every cook. Be versatile and keep practicing.
