Texas mop
I was watching man fire food last night and saw a lady mopping ribs and chicken with a "Texas mop". She said it was vinegar butter onion and lee and perrins. I can't spell the w word!!! Anybody know the ratios? Is it any good? I have 2 racks of spares I plan on doing Saturday.

I don't know the ratio she used but I'd start with a table spoon of each and adjust from there.

Was it Miss Tootsie from Snow’s in Lexington? If so it was the same mop sauce she uses on pork steaks.

Well after a little test run of my own, the 1:1 ratio is really close. Needs to rest and meld after heating but all in all pretty close and pretty good.

With the pits full and the fires steady, it was time to get the onions simmering for the mop sauce, so called because it’s applied with a small cotton mop. Prepared with vinegar, Worcestershire sauce, dry mustard, and margarine, the sauce adds flavor to the meat while it’s cooking and also keeps it from drying out or burning.
