A freezer dive a few days ago revealed a 2 bone rib roast - perfect for just my wife and I.
Rubbed with a flavored (garlic and capers) olive oil, a healthy dose of salt, garlic powder, and rosemary from my garden:
On the Assassin at 250 to an IT of 115:
Seared on the BGE at 550 for about 2 minutes a side and rested:
Sliced and ready to go........it was delicious!
Life is good!

I'm used to seeing a bit more crust on a prime rib, but the color of the cut meat is spot on perfect.
