Yes Sir, that looks delicious. love me some smoked Turkey. What cut is that or how is it sooo flat? Looks like a turkey Brisket flat

Its a large boneless turkey breast. One of the guys on our team has an account with a supplier. These things are massive!

I think its Gordon Food Service.
I cook to color, then wrap with butter and cook to 165. Its Franklin's method and you cant go wrong.
