Guru Party DigiQue Brisket

Postby limey » Fri Sep 28, 2018 10:02 pm

Picked up a new toy for my Weber SM, a battery fan device called the Party DigiQue. Really easy to install and basically set and forget with my other temp controls.

I had a nice 13 pound prime brisket I picked up for a great price of 2.38 lb. I had been resting it for 30 days in my beer fridge for a BBQ comp but decided to have the weekend off. Trimmed the brisket and injected Aaron Leslie Cowcutta injection. Rubbed with SuckleBuster SPG and Big Country Bovine Rub.Yes, this is my comp. rub recipe, great stuff. Wrapped at 175 internal temp with some Better than Beef bouillon. Probed tender at 205 mark. Great flavor! Took about 12 hours at 250. I had to add some more Kingsford and Pecan around the 9 hour mark but was real pleased with The DigiQue.

Nice brisket for less than 30 dollars

Great looking packer, sir! I had a bit when I was looking into temp control and abandoned my PID controller build due to frustrations with faulty parts. I may get one a bit later on; either build my own again or just buy one. :dont:

Cool toy and awesome looking brisket. People look at me like I’m nuts when I tell them I let my briskets sit in the fridge for a month but I sure like the way they start to breakdown.

My wife thinks I’m nuts. She will look at the butcher tag, best used by so and so date and then she tells me you are gonna ruin that brisket. I just tell her ‘Trust me Darling’.Have not had one go bad on me yet.
