Thanks guy's, it was a long day. The brisket's went on at 4:00am, off at 3:00pm and rested for about 2 hour's. I didn't get a pic of my sliced beef sandwich but it sure was good. One of the brisket's will get vacuum packed this morning and put in the freezer for later consumption. :salut: :salut:

Stick burners rule. It's like fore play, taking your time gets you great results.

I absolutely LOVE early mornings like this.....alone with a good cup of coffee and listening to the woods around my house wake up while the cooker comes to temp........peaceful. :D
