Thanks guy's, it was a long day. The brisket's went on at 4:00am, off at 3:00pm and rested for about 2 hour's. I didn't get a pic of my sliced beef sandwich but it sure was good. One of the brisket's will get vacuum packed this morning and put in the freezer for later consumption.

Stick burners rule. It's like fore play, taking your time gets you great results.

I absolutely LOVE early mornings like this.....alone with a good cup of coffee and listening to the woods around my house wake up while the cooker comes to temp........peaceful.
