Plate Ribs UNCUT

Postby BlueSmoke » Thu Oct 04, 2018 3:03 pm

Hey folks,

Does anybody in Houston know where I can get Plate Ribs that are uncut? I know they'll be huge but, that's what I'm looking for. I've looked a couple places and nada. Maybe it's a special order from a butcher?

I"m North of you but I've gotten them at Brookshire Bros in Montgomery. Have you tried HEB yet ??? :salut:

I've tried them a bunch of times, no luck. I try and explain what I'm talking about but, I never get through. I've seen the plate ribs cut into 3's there though. I'll have to check out Brookshire Bros! Thank you!

Not in Houston but I know they’ve been had at Costco and Sams in the DFW area. I got mine at an HEB in waxahchie a while back. Had to ask and they got them out of the back.

Problem I find is most places don't know the diff between plate short ribs and chuck short ribs. Plate is the largest, usually a 3 bone configuration.
These are what I look for. HEB has Chuck short ribs, 4 bone configuration. Usually have to ask for them to pull from the back if they even have these.
I've yet to see Plate ribs there.

Need to go to a good butcher to get these. I use Salt and Tyme in Austin. They have Prime. Last time purchased they were $5.97 / lb. Got two racks that were 9 lbs.
And they are worth every penny!!!

I'm new to the forum so i will have to learn posting pics... which i will do soon.

When I want Dino ribs, I go to a local meat market and ask for flanken ribs or plate ribs. Likely will have better luck at a Meat Market rather than a grocery store, although HEB in Corpus has them.

Flanken ribs are often crosscut  - (insert crying emoji here)

My main meat joint! Texas Star Grills. 59 and Shepherd. Talk to Gus or Rick. Also where I get my Outside Skirt steak from. They also have SRF briskets.
