So I bring you food envy. The crust taste great but the slicing will be tomorrow.

Me too. The morning can’t come any sooner for sure. The smoke time was not close. It said 90 minutes and it was more like 3 1-2 hours to get it to 130.

Well it’s done. I do like the flavor of it. Due to the varied thickness of the round. It definitely plays a roll and at least you have to remember that it will be at a different temp than the rest. I took it off at 132 mainly due to my family’s desire to eat meat more cooked than myself. That being said, here’s my Italian roast beef.

Thanks but the color is not like yours. It is a little deceiving as you can feel the moisture of the slice on your hands more than I expected, but it just doesn't show as well by looking at it. It tastes great for sure.

That one had horsey sauce on it. My second one for lunch had havarti on onions melted it then the roast beef. The bun was toasted and it was money.

Who cares about shades of color? :D I've smoked roasts the exact same way that turned out darker than the pics I posted. Every roast is different.

It's ALL about the taste. If it was good, that's entirely all that counts.
