Sliced butt

Was too busy on my birthday to get the smoker rolling, yesterday was my day to make up for it. Haven't done a pork butt in a while, decided I would hook up some sliced pork.

After about 3.5 hours at 275. Cooking with briquettes and cherry chunks. The color developed beautifully!

And pulled to rest after 6 hours. Everyone loved the color. I'll have to get some slice pics at lunchtime today because I forgot yesterday and I'm making a sammy for lunch with leftovers!

Cherry gives the meat a distinct color that no other wood I have cooked over provides...

looking forward to the sliced pics, by the time I get one done no one waits for pics :dont:
