I recently got an injector very similar to this one and it is definitely beast. Lol! Has 2 needles, 1 that would inject paste and the other liquid. Doesn't hold an incredibly large amount, but it delivers it VERY well!

Ended up injecting a tri tip I had as a trial run. Here is the finished product. Everyone loved it

What "liquid" did you end up using? AND What ratio mix to liquid?

You got it! Ended up using 1 cup of beef broth and 1/3 cup of the injection. I will definitely be using that same mixture again

Those places you mentioned do not inject, low n slow and a good rest is what the do in addition they cook high quality upper choice or primes.
add a little salt n pepper to some beef broth, strain after it steeps a couple of hours then inject, it will taste very good.
