Used to own a BBQ restaurant and we had a smoked tongue eggs Benedict as a brunch special. Our best results were smoking the tongue first then braising till tender. Cooking all the way on the smoker will for sure result in an unpleasant texture. And braising after smoking will lighten the punch of smoke, which can be handy since tongue usually has other items paired with it and don’t want the smoke to drown out the other flavores in the taco, sandwich or whatever you’re adding it to.
