Our Christmas Dinner here was a last minute throw together gathering when we found out that the Wife's Sons and Family were not going on a trip after all. So a quick run to the store and a very long morning got it accomplished. Also at the last minute we found out that one of the Family wasn't bringing the Rice Casserole. So I Giggled a quick Crock Pot Scalloped Tater Recipe that ended up a surprise hit after all.

My plate of Ham, green beans, few veggies, sweet tater casserole, scalloped taters and wheat roll didn't include the Baked Beans (yuck).
Lots of Fruits, Veggies, Cake, Pie, Nuts, Granny Crackers and ETC.

We have a traditional brunch on the first day Christmas.
A table with:
Liverpaste, pickled? Deer, different cheese, eggs, gravlax, smoked salmon, cured sausages, pickled pig, roast beef, red beet salad, tomato herring, meat balls of pig, lefse ( soft flatbread). We also have fermented trout which is trout that has been salted and fermented for 3-12 months. It's eaten raw with sour cream and onion.
And small glass of what some of you call fluid from the devil: Aquavit.

My Aunt does coke salad as well. I was told it’s an east Texas thing but they aren’t that far apart. I have no idea what’s in it but I love it.

Ok this is all too funny. Same aunt just gave me this cookbook and check out the recipe!
She had no idea it was in there and confirms it is the one she uses. She says my Meemaw learned to make it back in Oklahoma so it is definitely a regional dish. So cool to see other families make it too.

As for me, I don't like Jello so all I did was chop and mix and pour for SWMBO.
