Christmas dinner
Just lit the pit for two briskets and a pork butt. These will be Christmas eve and Christmas dinner. Ribs to follow around noon for tonight. Rubbed with salt, and pepper. Added some wrights, first time trying it. How do yall re hear? Was going to rest it in a foil pan then just refrigerate and re heat at 250 in the oven.

Re: Christmas dinner
For me, 250 sounds too hot.
I would wrap tight and aim for as low as my oven would go, somewhere around 160,or you could pull the meat before it's completely cooked and THEN "warm" at 250 until it develops a good flop.

Re: Christmas dinner
That's a good idea of pulling a little early. I may try that!
