Christmas Eve gumbo.

I smoked two chickens yesterday for today's gumbo. The gumbo is done and resting now for the trip to our daughters house.

Great looking roux! I start getting nervous as it gets darker. When the popcorn smell gets really noticeable, I call it quits. Lol! It doesn't turn out as dark as yours here. Maybe I should relax a little?

Pushing the envelope on roux is tricky Txdragon. I have been doing them for quite a while it is kind of a look and smell thing for me.

Yes Sir. 36 peeled eggs. When the gumbo has come together and simmering I add them. The egg really soaks in the flavor.
