Oxtails on the Pit Boss Ceramic
Sunday I made oxtails on the grill. I trimmed the fat from the outside edges of the tail meat and seasoned liberally with Texas Select Seasonings Basic Beef and Jalapeno Dusted. Put them on the Pit Boss 275 degrees, indirect heat, and let them ride for about an hour and a half until they had good color on them. While they were on the grill I started a pot of braising liquid, on the stove, with onions, garlic, diced tomatoes, salt, pepper, red wine, and beef stock. Took the pot out to the grill and added the oxtails and let them ride for about three and half hours. BAM!! HOME RUN!!

Oh my. I’ve had Caribbean style oxtails but never Texas style. If those were half as good as they looked you had a fantastic meal.

That look fantastic and an interesting cook for me. Never seen it before. The only ox tail I've had is in ox tail soup.

I've never cooked oxtail but have eaten a lot cause my mother insisted on using oxtail in her spaghetti sauce....
