Injection profiles

Postby Copasspupil » Wed Jan 16, 2019 4:10 pm

Ok I’m planning on smoking a pork loin with a Caribbean jerk profile and I did the wet rub today. I’m looking at injecting it also so
1. When would you inject it prior to smoking it?
2. The injection profile the same flavor and heighting the profile or something different?
3. Any other thoughts?

I vote the same flavor profile but be sure to strain out all the bits or the injector needle will clog up.
I've seen some guys injecting by inserting the needle into the main blood vein so the liquid gets distributed evenly.

OK great thanks but when to inject? I've read something like 2-12 hours prior to placing in a smoker. Does that sound about right?

Hopefully Papa Tom or Limey will see this; they seem to be very knowledgeable about injecting

If you're using water or broth based injection longer time periods are fine, if you're using anything acidic like vinegar, pineapple juice etc you should inject closer to cook time
