Been smoking plate beef shorts for a while. Depending on the marbling, I've pulled them from 185 to 205 when probed by just letting gravity
take the probe through them.
I've never "completely" rendered out the mid fat. Basically what you've achieved is spot on! After all, it's flavor my friend!!
