Re: My first unicorn brisket....
I must be getting old.. I remember brisket at $0.12 per pound and if it was not sold the store owner would feed it to his dogs

Re: My first unicorn brisket....
back in "those days" it was considered dog food, no one bought it, from time to time I would be instructed to mix it in with the hamburger, but cut some of the fat out

Re: My first unicorn brisket....
I am going with a smaller wagyu so I can finish earlier and I can rest it enough before dinner tomorrow night.....
Doing him straight up Texas style....
Sliced this little thin guy off for a midnight snack...
Race is off...
Temp is there...
I trimmed him down to a svelte 14.5 lbs.. I may try my hand at sausage so vacu sealing and freezing this up.

My first unicorn brisket....
Tossed these in as well...didn’t want prime drippings over Wagyu so pulled out the rack and up went the brisket...
Just wrapped up the big girl... just past 8 hrs in. Plenty of bark...
This one stays home...
I’m doing a swap for a pork rack from my friend/neighbor/boss for the small beef rack...
4hrs more hours for the ribs... I’ll check brisket then..
